A great seasoning


Perhaps we should rename this blog "The food that Sam and Chris saw and ate in Thailand", but what can we say - we both have a passion for great food.

A popular seasoning around these parts is sliced chili in fish sauce.  Fish sauce is generally made from fermented anchovies, and it imparts a wonderful flavor to whatever you put it on.  The chilis you slice for it are very potent.  After they have some time to bleed some of their spicy goodness into the fish sauce, you're ready to add some to whatever you're eating.  Great for soups, noodles, rice, or just about anything!

Here's some Sam made up to keep around for our home-cooked meals - highly recommended!
