We were hungry the other night, and went to try a food cart parked on the street in front of the 7-11 outside the front door to our residence. He was cooking up pig's tongue and pig's small intestine over hot embers - we took one of each, and he sliced them up thin and added some spicy sauce to them.
Savory and divine. Pig's tongue tastes like chicken gizzards (muscle) and pig small intestine - sort of like tripe.
