If a street vendor has a mortar and pestle on their cart, you know they're serving up Northeast Thailand-style papaya salad. Very spicy, often fishy, full of vegetables and fruits (including, of course, shredded papaya), it's good eats. Here you can see the vendor in action during the making of said salad.
